Boiled Sultana Cake

Fruit Cake Favourite - excellent for school lunch boxes, freezes well, a hit with almost everyone!

What you'll need:

1 lb (500 gm) sultanas or fruit cake mix
1/2 lb (250 gm) butter
3 eggs
10 ozs (610 gm) flour
10 ozs (610 gm) sugar
1 tsp of each - Almond, Vanilla, lemon essences
1 tsp B Powder
pinch salt

Method:

Put the sultanas in a pot and cover with water. Bring to the boil for 5 mins. Drain and then cut up the butter and add to the sultanas while hot.  Beat together the eggs with the sugar. Add the flour, B powder, essences and salt. Next add the fruit mixture and mix well. Bake for 1 1/4 hrs in an 8 inch tin in a moderate oven.
